Crusted Zucchini Fries Recipe

The Recipe:
Ingredients:
- 2 medium zucchinis
- 1 bag of Jackson's Classic Kettle Chips
- 1/2 cup all-purpose flour
- 2 large eggs
- 1/4 cup milk
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 1/4 tsp salt
- 1/4 tsp black pepper
- Chosen Foods Avocado Oil Spray
For the Dipping Sauce:
- 1/2 cup Greek yogurt
- 1/4 cup mayonnaise
- 1 tbsp lemon juice
- 1 tsp garlic powder
- 1 tsp dried dill
- Salt and pepper to taste
- Chopped chives for garnish
Directions:
Step 1: Preheat your oven to 425ºF. Line a baking sheet with parchment paper and lightly spray it with cooking spray.
Step 2: Cut the zucchinis into fry-shaped sticks, about 1/4-inch thick and 3-4 inches long.
Step 3: Place your kettle chips in a food processor and pulse until they are finely crushed. Transfer the crushed chips into a shallow bowl.
Step 4: In a separate bowl, combine the flour, garlic powder, onion powder, paprika, salt, and black pepper. In a third shallow bowl, whisk together eggs and milk.
Step 5: Dredge each zucchini stick in the flour mixture, shaking off any excess. Dip the floured zucchini stick into the egg mixture, allowing any excess to drip off. Finally, coat the zucchini stick with the crushed kettle chips, pressing gently to adhere. Place the coated zucchini sticks on the prepared baking sheet in a single layer.
Step 6: Lightly spray the zucchini fries with cooking spray to help them crisp up. Bake in the preheated oven for 20-25 minutes, turning once halfway through, until the fries are golden brown and crispy.
Step 7: In a small bowl, combine the Greek yogurt, mayonnaise, lemon juice, garlic powder, dried dill, salt, and pepper. Mix until smooth. Garnish with chopped chives.
Step 8: Serve the crusted zucchini fries hot with the dipping sauce on the side and enjoy!
