Crispy BBQ Chicken Cutlets Recipe

The Recipe

Ingredients:

  • 1 cup Jackson's Carolina BBQ Sweet Potato Chips, crushed
  • 2 Boneless skinless chicken breasts, sliced into cutlets
  • 2 large eggs
  • 2 cloves garlic
  • 2 tbsp parsley, finely chopped
  • 1 cup grated Parmesan cheese
  • 1/2 cup flour
  • Olive oil
  • Salt and pepper to taste

Directions:

Step 1In a shallow bowl, combine crushed chips, 1/2 cup grated Parmesan cheese, minced garlic, and chopped parsley. Mix together.

Step 2In another shallow bowl, whisk together eggs, 1/2 cup grated Parmesan cheese, a pinch of salt and pepper until well combined.

Step 3In a third shallow bowl, add flour.

Step 4Place a piece of thinly sliced chicken on a cutting board, cover with plastic wrap, and pound to ½ inch thickness. Repeat with the remaining chicken breasts. Season both sides of each piece with salt and pepper.

Step 5: Coat each piece of chicken in flour, shaking off excess. Dip in the egg mixture, letting excess drip off, then press into the chip mixture until fully coated. Repeat with all pieces.

Step 6: Heat a generous amount of olive oil in a large pan over medium-high heat. Cook the chicken in batches, 1-3 pieces at a time, without overcrowding. 

Step 7Sauté until golden brown on both sides, then transfer to a rack or paper towels to drain.
