Cowboy Caviar Recipe

The Recipe

Ingredients:

  • 1 red bell pepper
  • 1 orange bell pepper
  • 1 yellow bell pepper
  • 1 green bell pepper
  • 2 jalapeños
  • 3/4 red onion
  • 2 cans sweet corn
  • 2 cans black beans, rinsed
  • 1 can pinto beans, rinsed
  • 1 can sliced black olives
  • 2 avocados
  • 1 container feta cheese

Dressing: 

  • 3 limes, juiced
  • 1/2 cup extra virgin olive oil
  •  1/4 cup white wine vinegar
  • 1 packet taco seasoning
  • Salt and pepper to taste

Directions:

Step 1: Dice the red, orange, yellow, and green bell peppers into small, bite-sized pieces. Finely chop the jalapeños, removing the seeds if you prefer less heat. Dice the red onion into small pieces.

Step 2: In a large mixing bowl, combine the diced bell peppers, chopped jalapeños, and diced red onion. Add the sweet corn, black beans, pinto beans, and sliced black olives to the bowl. Mix thoroughly to ensure even distribution.

Step 3: In a separate bowl, whisk together the lime juice, extra virgin olive oil, white wine vinegar, and taco seasoning. Add salt and pepper to taste, adjusting as needed.

Step 4: Pour the dressing over the base ingredient mixture. Toss everything together gently to ensure all ingredients are coated with the dressing.

Step 5: Dice the avocados and add them to the bowl, gently folding them in to avoid mashing. Crumble the feta cheese over the top and give it one last gentle mix.

Step 6: Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to blend together. Serve chilled with a fresh bag of Jackson's Wavy Sea Salt Sweet Potato Chips and enjoy!
