Chocolate Potato Chip Cookie Recipe

The Recipe

Ingredients:

  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 sticks unsalted butter (room temperature)
  • 1 cup white sugar
  • 1/2 cup light brown sugar
  • 1 large egg
  • 2 tbsp milk
  • 1 tsp vanilla extract
  • 2 cups lightly crushed Jackson's Classic Kettle Chips
  • 2 bars Lovo Chocolate (we used Oatmilk and Almondmilk!)

Directions:

Step 1: In a bowl, whisk together the flour, baking soda, and salt. Set the mixture aside.

Step 2: Using an electric mixer, beat the butter, white sugar, and brown sugar together until the mixture is light and fluffy. Add the egg and continue mixing until fully incorporated and the mixture is smooth. Add the milk and vanilla extract, and mix until well combined.

Step 3: With a spatula, gently stir in the potato chips and chocolate chips until just combined. Add the flour mixture to the wet ingredients and continue mixing with the spatula until the flour disappears and the dough comes together.

Step 4: Wrap the dough in plastic wrap and chill in the refrigerator for about 30 minutes, or until ready to bake. If desired, the dough can be used immediately without chilling.

Step 5: Preheat your oven to 375ºF (190ºC). Line baking sheets with parchment paper.

Step 6: Using a rounded tablespoon, scoop the dough onto the prepared baking sheets, spacing the scoops evenly to allow for spreading during baking.

Step 7: Bake the cookies in the preheated oven until the edges are lightly browned, about 12 minutes. Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Step 8: Once the cookies have cooled completely, serve and enjoy your delicious chocolate potato chip cookies!
