Step 1: Preheat the oven to 425ºF and line a baking sheet with parchment paper.

Step 2: Cut avocados lengthwise, into wedges.

Step 3: Mix flour, garlic powder, cumin, chili powder, and salt in a bowl with your crushed sweet potato chips.

Step 4: Dredge avocado wedges in flour mixture, then dip in beaten eggs, and coat with chips.

Step 5: Place coated avocado wedges on a baking sheet. Spray with avocado oil. Bake for about 8 minutes or until golden and crispy, flipping halfway through.

Step 6: Let cool slightly and serve with dipping sauce - we paired ours with Primal Kitchen's Ranch Dressing & Marinade!
